PROTEIN BLUEBERRY SWEET ROLLS

We love a good protein cinnamon bun, but how about giving it a summery twist by making it fresh, fruity and light? This Protein Blueberry Sweet Rolls recipe is exactly what we came up with! You can easily make these with only 7 ingredients you probably already have at home, and be ready for a tasty protein snack!

 

Ingredients (6-8 buns)

Buns : 

  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 1 scoop Smooth Vanilla Isolate protein
  • 1/4 tsp baking soda
  • 1 tbsp baking powder
  • 1 cup 0% fat greek yoghurt
  • 1/2 cup frozen blueberries
  • 1/4 cup + 1 tbsp stevia

Glaze :

 

Preparation

  1. Preheat oven to 325F ;
  2. Start by making the dough. In a bowl, mix the flour, 1 scoop of protein powder, baking soda, baking powder, and 1 tbsp stevia. Once well combined, add the greek yoghurt and mix until you get a ball of dough. You might have to use your hands here ;
  3. Sprinkle flour on a clean, dry and fat surface. Put the dough on it, and sprinkle more flour. Roll out the dough until it's about 0.5cm thick.
  4. In a seperate bowl, mix the blueberries and stevia. Microwave for 30s intervals, until you can easily mash the blueberries ;
  5. Evenly spread the blueberry mixture on the dough, then roll to form a cylinder shape ;
  6. Cut into 6-8 rolls, and place them into a small baking dish ;
  7. Bake for 35 minutes ;
  8. While the buns are cooking, mix the ingredients for the glaze ;
  9. Let cool, add the glaze, and enjoy!
