PROTEIN CARROT MUFFINS
If you love carrot cake, then you'll want to try this Protein Carrot Muffin recipe. These cute, perfectly sweet muffins are packed with nothing less than 10g of protein each. They're ideal for a quick pre-workout snack, or paired with yoghurt and fruits for a convenient breakfast. Talk about a great way to sneak in some extra vegetables!
Ingredients (6 muffins)
- 70g oat flour
- 40g Smooth Vanilla Isolate protein
- 50g unsweetened applesauce
- 60g greek yoghurt
- 1 egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tsp baking powder
- 80mL water or milk
- 1 medium carrot, finely grated
- Optional : sweetener to taste
Preparation
- Preheat oven to 350°F ;
- In a bowl, mix the greek yoghurt, egg, vanilla extract, water or milk, and grated carrot. Mix until well combined ;
- Add the rest of the ingredients to a seperate bowl and mix ;
- Slowly incorporate the dry ingredients to the wet ingredients ;
- Line muffin molds in a muffin tin and seperate into 6 muffins ;
- Bake for 20-25 minutes ;
- Let cool and enjoy or store in the fridge for up to 5 days!
