PROTEIN STRAWBERRY MUFFINS
Let the fresh, sweet flavours of this Protein Strawberry Muffin recipe make you feel like it's Summer already. With 20g of protein each, these muffins will satisfy your sweet tooth, help you reach your nutritional goals, and will for sure make your home smell like a cozy farmhouse on a warm summer morning. Meal prep these for your daily dose of sweetness, all throughout the week!
Ingredients (6 muffins)
- 1/2 cup fresh strawberries
- 1 cup frozen strawberries
- 1 egg
- 1 cup cottage cheese
- 1 tbsp vanilla extract
- 1 cup oat flour
- 2 scoops Maple Brown Sugar Isolate protein
- 2 1/2 tsp baking powder
- 1 tsp baking soda
- Optional : 2 tbsp stevia
Preparation
- Preheat oven to 350F ;
- Chop the fresh strawberries into small cubes. Save for later ;
- Using a food processor, blend the frozen strawberries and the cottage cheese until smooth. Pour into a large mixing bowl ;
- Add the egg and vanilla extract, and mix ;
- Once combined, add all the dry ingredients and mix until well combined ;
- Fold in the chopped fresh strawberries ;
- Add parchment paper to 6 muffin molds, and seperate the batter evenly between each of them ;
- Bake for 30-35 minutes, let cool and enjoy!
